Mini Banana Bread

How are you keeping the kids hunger at bay during the school holidays? I always make a batch of one of the kids favourite snacks - freshly homemade mini banana bread using the RACO Aerolift Bakeware. This RACO bakeware has truly made baking so much easier for me due to their non-stick superior quality which means baked goods slide out easily (without the need to line the bakeware or grease it!) and also making it easier to clean.
Ingredients:
120g softened butter
200g brown sugar
4 bananas mashed (preferably ripe)
2 eggs
1 ½ cups plain flour
1 tsp baking soda
1 tsp salt
1 tsp vanilla extract
Method:
- Preheat oven to 160 degrees fan-forced (or 170 degrees non fan-forced).
- Place the softened butter and brown sugar into a bowl. Mix until it looks pale and fluffy.
- Add the mashed banana and the eggs to the butter mixture. Mix until well combined.
- Add the plain flour and baking soda to the bowl.
- Add the salt and vanilla extract and mix.
- Pour the mixture into the RACO Aerolift 6 Cup Mini Loaf Pan.
- Cook for 1 hour.
Tip: You can check if it’s ready by inserting a skewer into the middle of the mini banana bread and it comes out clean.
